From Rachel's Kitchen: Blueberry Mojitos!






It's blueberry season -
they are sweet and the perfect pairing partner
to a refreshing mojito.

Mojitos in my book scream
* Warm Weather *
and in the summer, when fresh mint is
readily available in my herb garden,
they are a definite entertaining and hostessing YES.

Forget 'You had me at hello'
I'm all...
'You had me at mojito.'


What You'll Need:

1. Handful of fresh blueberries (Some for simple syrup, some to muddle)
2. Mint Leaves
3. 1 Large Lime Wedge
4. Blueberry Simple Syrup
5. 2 oz. Rum
6. 4 oz. Club Soda (Polar's 'Triple Berry' Seltzer worked wonders!)
7. Ice




Blueberry Simple Syrup: Very Easy! 
1 Cup Blueberries + 1 Cup Sugar + 1 Cup Water 

Boil together in a saucepan until your blueberries are soft and mushy. You can use a fork to pop them if they need a little assistance de-juicing. Strain the mixture, tossing the blueberry jam and you have your blueberry simple syrup! :)


Making Blueberry Simple Syrup
Directions:
  1. In a cocktail shaker, muddle blueberries and mint together. 
  2. Add a splash of club soda, ice, blueberry simple syrup, and rum and SHAKE, SHAKE, SHAKE.
  3. Strain into an ice-filled mason jar and top off with club soda. Add some fresh blueberries and a sprig of mint to garnish.

No Mason Jars? Don't fret, my little pet. Blueberry Mojitos look great in regular glasses too!

This is the perfect spring/summer beach cocktail.
